Turkey Meatloaf with
Lighter Mashed Potatoes
A
loftier, lighter cousin to our famous Beef Meatloaf, the turkey
meatloaf
is
leaner but just as flavorful! The lighter mashed potatoes are whipped
fully
without
incorporating the usual wealth of cream and fat. We'll bet you don't
notice
a
difference worth mentioning. The sauce is a red bell pepper sauce,
thickened with
tomato
and herbs. The tangy sauce lock in the moisture and add a delicious
component
of its
own to this new healthy addition to our menu.

Heating Instructions
Oven directions (preferred method):
Remove Plastic lid and cover with Foil. Place pan in pre-heated oven at
325°F for 20-30 minutes for small and medium, 40-45 minutes for large or
until thoroughly heated. Rearrange meatloaf slices halfway through
cooking time to promote even heating.
Microwave Directions:
Remove lid and cover with a paper towel. Heat for 3-4 min. (small),
4-6 min. (med) or 5-7 min. (large). Rearrange meatloaf slices and stir
potatoes halfway through to promote even heating.
Ingredients:
Meatloaf: Turkey, red pepper, white wine, olive oil, Onion, garlic,
bread crumbs, eggs, milk, tomato, basil, parsley, sugar, salt, pepper
Whipped Potatoes:
Idaho potatoes, butter, chicken stock, salt, pepper
