Chicken and Cheese Enchiladas

Corn tortillas are filled with cooked chicken breast, mild green chilies and a blend of cheeses, then topped with a creamy tomatillo sauce and baked until bubbly.  The enchiladas come with fresh salsa and jalapeno peppers on the side. It is not too spicy but definitely not plain.  (Oven heating is recommended for this meal)

Heating Instructions

  • Oven directions:  Place pan on cookie sheet before baking.  Remove lid and cover pan with foil. Bake at 350°:  25 min. for small/medium or 35-40 min. large.  Let stand 10 min. after heating to make serving easier.
