Coq Au Vin
A French Classic! Chicken (mostly thigh and leg meat on-the-bone) is marinated overnight in red wine with carrot, celery, onion, garlic and thyme. The chicken is then browned on the griddle and simmered with the wine and vegetables until tender. The braising liquid is thickened slightly and poured over the chicken. Served with egg noodles and garnished with the vegetables, mushrooms and crumbled bacon.
