Sauteed Chicken w/Tomato Wine Sauce & Vegetable Risotto

A new dish from our Italian chef, John!  Chicken breasts are seasoned and seared on the griddle then finished in the oven.  The sauce, or “gravy” as the Italians say, is made from sweet cherry tomatoes sauteed with white wine and garlic.  Served with risotto chocked full of seasonal vegetables and a cream based tomato sauce.

Oven directions (preferred method):  Preheat oven to 350°.

  • Remove lid and REMOVE CHICKEN AND HEAT RISOTTO FIRST.  Cover risotto with foil.  Bake in preheated 350° oven for 20-25 min.
  • ADD CHICKEN AND CONTINUE COOKING FOR 10-15 min. or  until thoroughly heated.
  • Heat gravy separately or pour desired amount over dinner and heat as directed above.
  • Ingredients:  Chicken breasts, garlic, cherry tomatoes, basil, olive oil, vegetable oil, white wine, salt, pepper.  Risotto:  risotto, zucchini, yello squash, mushrooms, tomato juice, parmesan cheese, whipping cream.
