Moroccan Braised Lamb & Couscous with Almonds & Raisins

Lamb shoulder marinated in onion, ginger, cinnamon, paprika, cloves and cayenne, then braised and combined with carrot, celery and onion.  Topped with couscous flavored with spices.  Garnished with zucchini, yellow squash and bell peppers.

Heating Directions:

  • Oven:  Remove lid and cover with foil.  Heat at 350 degrees 20-30 minutes, stirring occasionally.  Try to keep couscous on top until lamb is hot.
  • Microwave:  Remove lid and cover with paper towel.  Heat two minutes on high.
  • Ingredients:  Lamb shoulder, tomatoes, couscous, zucchini, yellow squash, red bell peppers, onions, raisins, almonds, cumin, cinnamon, paprika, cayenne pepper and coriander.
