Slow Roasted Pork with Roasted Fall Veggies

Pork loin is rubbed with garlic, shallot & olive oil and slow roasted over low heat so that juices are retained and the meat is tender.  Served with roasted red potatoes, sweet potatoes, carrots,  parsnips, shallots, garlic and seasonings.

Heating Instructions

  • Oven directions:  Remove lid and cover with foil.  Heat in pre-heated 350° oven for 20-25 minutes for small/medium and 30-45 min. for large.
  • Microwave directions:  Remove lid and cover with paper towel.  Heat for 3-5 minutes (small/medium); 6-8 min. (large), rearranging potatoes and pork halfway through heating time to assure even heating.
  • Ingredients: Pork shoulder, red potatoes, sweet potatoes, carrots, parsnips, shallots, garlic, olive oil, salt, pepper, thyme, parsley.
